As a picky eater who also practices vegetarianism, finding foods appealing to my palate that are also “meatless” can be extremely difficult. However, as a full-time student in my 20s, I have learned the importance of fueling my brain and body healthily. With this, I have come up with five low-cost, simple recipes to try this fall.

#1-Potato Soup

Nothing screams “fall” more than a bowl of warm potato soup. This vegetarian-friendly recipe is one of my go-tos as the weather becomes crisp and cool.
For this recipe, you will need:
- Russet potatoes
- Cheese (optional)
- Milk
- Butter
- Green onion
- Red pepper flakes (optional)

#2-Ghost Shaped Pizza

To kick start this spooky season, nothing is more fitting than a homemade pizza in the shape of a ghost. Fully customizable, this recipe gives free range when it comes to adjusting the ingredients according to your palate. But in case you get stuck, here are some ideas:

- Pizza dough (store-bought or homemade)
- Pizza sauce (store-bought or homemade)
- Cheese (recommended: mozzarella)

#5-Pumpkin Muffins (healthy alternative)

Contrary to popular belief, these boxed muffins are the perfect healthy dessert for fall. With four grams of protein and less than seven grams of sugar, these muffins will healthily satisfy your sweet tooth cravings: low effort, low cost, and the perfect sweet treat.
